Mountain Honey
Mountain honey otherwise known as ‘Messmate’ is a variety of Australian eucalypt native to all states except West Australia. It’s is a very large tree often exceeding 90 metres and grows on high ground up to 1200 metres above sea level. It has glossy green leaves, the bark is rough and fibrous and the flowers are mostly white.
The nectar’s distinctive aroma attracts the bees and the honey to this specific flower. Messmate has it’s own distinctive full flavour preferred by many consumers in Australia and other parts of the world.

Mild Banksia
Mild Banksia honey is harvested from the nectar of the flowers of native coastal Banksia trees that grow up to 15 metres in height. The trees are extensively distributed along the Victorian and Queensland coasts and inland. Banksia flowers are often used for flower arrangements.
When the flowers are in bloom they are an attractive golden yellow and a colour that is characteristic of the honey. It produces a lot of nectar so the honeybees are highly attracted to it. The honey flavour is smooth, consistent and unique to Australia and enjoyed by adults and children alike.

Eucalypt Blend
Eucalypt blend is especially made from carefully chosen selection of the finest native Australian eucalypt honeys to sustain a consistent flavour and colour adjusted from time to time to accommodate nature’s subtle seasonal variations. The flavour is distinctive but not strong. It has a very smooth texture and good mouth feel with a pleasant after taste and aroma. This blend represents an international preference for native Australian honey and is most popular as a breakfast honey

Several eucalypt floral varieties are blended to sustain the distinctive colour and flavour specification. The most often preferred eucalypts for blending include; Red Gum, Yellow Box and Iron Bark. These specific honeys are considered to be premium varieties especially Yellow Box. They are generally widely distributed throughout Australia and flower at various times from September to January.
Yellow Box is considered Australia’s top quality and most preferred native honey with an international reputation for flavour, texture, mouth feel and health properties. This eucalypt is widely distributed especially in certain parts of Queensland and Victoria. The tree grows to an average height of 30 metres has dull green leaves and off-white flower.
The superb flavour and aroma makes it the top choice amongst honey connoisseurs and the respect of International Honey Judges. It’s flavour and texture creates versatility for cooking and baking while it’s the family choice of a table honey for those who need or prefer a smooth delicious flavour as a spread on bread and toast.
Red Gum trees grow 30 to 40 metres high, the leaves are long and blue-grey and the flowers are mostly white. Red Gum honey boasts its own unique bold flavour and distinctive aroma. A consistent family favourite since beekeeping started in Australia. An excellent table honey that is often used as an ingredient in a variety of recipes such as bread baking, Asian cooking and as a baste on meat and poultry. Red Gum flowering period is from November to January and is harvested near rivers and flood plains.
Iron Bark trees appear as two species and grow from 10 to 35m high along coastal areas, particularly in the eastern states, and on the undulating foothills of the Great Dividing Range. The bark can be very thick and dark and the flowers are white with yellow or red tones. It produces a high yield of lighter honey characteristically softer in flavour and aroma. The sweetness is subtle and gentle and it makes an excellent alternative to sugar as a sweetener in beverages such as tea and coffee as well as improving the flavour in cakes, biscuits and deserts.
Ground Flora Honey
Premium Ground flora honey is produced from the nectar of Salvation Jane, Canola and Lucerne flowers that blossom September to January. Their colours are purple and yellow and they are grown all over the southern states. The honey yields light to mild flavours with very little aroma. Those who don’t like a strong and bold table honey flavour usually prefer ground flora honey.
An excellent honey for basting white meats and adding to Asian recipes.
